@sunny: I do allow myself to do that once in a while, but it's difficult to do when I walk through the house and see the various "piles" of things and different projects that need attention.
Dinner... I'm not sure, actually. I'll cook either chicken thighs with a cauliflower & mushroom pilaf type thing and probably sweet potatoes, or maybe make broiled steak with brussel sprouts and colcannon. It depends what I'm in the mood to make in another hour or so - LOL!

It's basically a mashed potato substitute (unless maybe you're Irish), but it's a great way to use different vegetables (and hopefully get additional nutrients) and to change things up a little bit. I'm glad you guys are inspired!! <3
