I guess I just grew up not eating it until I tried being a Vegetarian as a kid.
Then again, a plant-based diet is far more well known now than back then. xD;

I guess today is a sleep-in kind of day, I slept in myself. xD
I've been using veggies we have vs letting them get sad, which, I am pleased with.
I used to eat all my food and if there were 2 bites left? Not worth saving, so, I'd eat it.
But, if I had more leftovers? I feel you on trying to eat them vs throwing them out. ^__^;

The strangest thing in my fridge at moment? Well, I have a few things that came to mind:



- Probiotics (all for good gut health and keeping them in the fridge prolongs potency).
- Half a block of tofu I pressed last night (had other half with my dinner).
- Oyster Mushrooms (this may be weird for some who never seen them).
- Half a bag of Curly Kale (yes, there is different types, who knew?!)

I moved here on December 28th, 2019, and was approved for 5-year residency starting mid-February 2020 and a little while later? Mark Rutte (Prime Minister) told us all we are going into lockdown, people from the USA and other countries need to go back home unless they've got the virus, people who were married and on residence permits were permitted to stay.

It's silly because I asked my husband after accidentally (long story) leaving my passport back in my parents' home (about a 6-hour drive away) and having to come all the way back to their home from Seattle if I should even come out there and he said, "I mean, you could wait, but, I rather you be home." - Thank GOODNESS I did come out here when I did, because if I held off? I may have only just recently been allowed to fly out here.

I wasn't living in Portland, I lived in a small town, but, I loved visiting Portland once in a while with my best friend, so, I miss him tons and going to VegFest (a Vegan event that has lectures from doctors or chefs or both along with a food hall to try all the new products that aren't yet on the shelves, it's how I met Caldwell Esselstyn and his daughter Jane Esselstyn a year prior to that).

I will say though while living in Oregon still with my parents would've been good for me to still see my therapist? I would've still had to fight for them to take me grocery shopping (I don't drive, forgot if I mentioned this yet to you) and take me to therapy (which, sometimes would take me pushing them) which I definitely need. - Since then? I've finally got a chance to see a Psychiatrist in person on the 8th about getting ADHD meds and hope they found something I can take that I am not allergic to (ex: Ritalin or Adderall).

I mean more than anything? It taught me how to make use of our deep freezer downstairs for frozen veggies which I trust here more than the ones in the states as often those usually contain added salt and even sometimes butter (but, why?! I get if you're making a pre-made meal, but, why?! Hah). It also has taught me how to downscale what I like having in the house. Do I need 20+ different condiments? No. I like sriracha, sauces/dressings/dips I make, maple syrup, tamari, and mustard cold. Meanwhile, balsamic vinegar, rice wine vinegar, and apple cider vinegar (is it obvious I like vinegar?) can stay on the counter. ^__^

It's been a huge culture shock and awakening for me as well moving out here, but, it's definitely helped me be exposed to real-life vs what I was raised in and it's nice to see how much more respect (although blunt) people are here. Good example? I wasn't used to trains yet (my first time riding on one was when I came here on December 10th, 2018 till March 9th, 2019). During my last week being here, I visited Amsterdam for the first time (flew in during the night) and wound up tripping on the train platform (was uneven then).

In America, I've seen how people treat others, sometimes laugh, and refuse to help (I know some people are like me care enough to help others, but, most likely? Someone would laugh). I was scared to stand up, but, someone who saw me fall who was on the train and got offhanded my husband (newly fiancée at the time) an unopened bottle of water and asked if I needed anything. I don't speak enough Dutch to respond, my husband told her, "No, but, thank you!" she flagged down a train station assistant, and someone walking by handed me a few mandarins.

Both stood beside me along with the assistant until they got some security, they asked if I could stand and I shook my head, I was scared I shattered my knee caps from how hard I fell. I was sobbing from how much pain I was in. They then called for backup, the two women who helped me had to catch their trains but said, "Well, be safe! Hope to see you on your feet soon and have a safe flight on way home!" The two security blocked where I was so they could tell people to go around and a nurse from in station came to see me and told me they could give me medicine, thing is, I am allergic to lactose, and almost ALL the medicine they offered? Had it. They asked if I wanted to be x-rayed in the case and I nodded.

So, now, we had the station nurse near me to ensure I was stable and not pass out from the pain, two security people having people walk around me or go another way as I was blocking most of the walkway (embarrassing), one officer at bottom of the escalator that came up near us and one near the elevator (I can only presume one officer on bottom of elevator too to tell ambulance where I was. Eventually, we got my knees scanned, were just two contusions on both knees and along my shins. The medicine they could give me? was 400mg Ibuprofen. xD; But, my in-laws (future in-laws then) paid for me to get crutches and my travel insurance covered my hospital visit.

The fact I can fall on a platform here, get x-rayed, on crutches, stay in hospital for what felt like forever (was most likely 3 hours), be given medicine, be seen by doctors in that hospital, and have an ambulance ride for all under €2,000? Blew my mind, thankfully? I had travel health insurance and from that day forward? My husband just knew how clumsy I am. - In America? I know that my short 5 minute trip in an ambulance after a gallbladder attack to the hospital cost $2,500 which insurance (thankfully) covered.

@Vegan: Don't worry about the delayed reply. It happens. :3 Yes, all the lockdowns, etc. have had a devastating effect on our ability to be the social beings we are (regardless of how introverted or extroverted any of us might be). I hope you get a chance to visit with friends iRL soon. What do you usually cook? ... and why can you suddenly start cooking now instead of previously (I'm so confused! LOL!)

My real-life friends that I am close to are still in Oregon. ^__^; I have only a few mutuals here in the Netherlands.
I've wanted to cook foods with no added oil as I notice it doesn't help me feel my best (thus, new pans).

(I don't have a gallbladder as of April 2017 and so it's best if I can sautée in water /or/ broth).

Older pans non-stick coating was damaged from my husband cooking at higher temperatures than a person should. xD;
I can now boil water at VERY low flame point which is nice vs needing to crank heat to medium before it would 'simmer'.

It's will also help long-term for us to get some pans that I can bake in (square ones for lasagna/shepherds pie/etc).
The problem is, we don't have an oven, only a convection oven+microwave combo and a small fridge with a freezer on top.

When I say small, I mean like, dorm-room size mini-fridge, maybe a little taller, to my hip about (5'6/169cm).
We have a deep freezer downstairs, but, someday, I'd love to have a full kitchen, just, homes here are expensive. D:
We've been offered almost 255k for our place and it's a small condo/townhouse/apartment-like complex.
(My husband paid 100k for this place and so we like, own our place, but, live amongst others if that makes sense)?

No worries! Life happens. I got very busy myself.
It was sunny for a few days then we got snow, so did UK apparently.
Today is just cold-ish, overcast and some rain (which I love).

I still get on Gaia as it's nostalgic for me, but, I found comfort here and made some close friends.
(Anywhere I go on Gaia, it seems there is someone who is toxic in one way or another).

I hope you can find some comfort here and I hope you enjoy it here as much as the rest of us!

I am SO sorry I didn't reply sooner.

I don't recall what I ate that day, probably was takeout. xD; (I am hopeful to cut that habit down or out).
It's nice you were able to see some friends! That's always comforting for me, even being introverted.
(I haven't been able to see my friends from USA because, well, lockdown, obviously, which makes me sad).

That sounds like so much fun (going to beach or park with a hammock+book+sketchbook).
Meditation is very nice, especially if you feel safe enough in your environment (either in nature or bedroom).

I feel you also on only being able to do so much or some stuff if it will work or not is never fun.
We had a few hot days here recently and today? I am able to keep living room open as it's nice and cool.

With April now coming up, I am super excited to start cooking my food from home. Got some new non-stick pans! :3

I think it's mostly because my sleep schedule has flipped around again.
(I sleep during the day, awake at night). Woke up around 6AM (5:55 about).

Also a few days ago, saw my nutritionist, next day (yesterday) went to the farmers market.

I am not used to going out of the house, it wears me out so easily. D:
Played a game of, "Will caffeine wake me up today?!" and the answer is, no, sadly. D:
(ADHD makes it where I either way up entirely, or it just makes me more tired than before).

That's fair, my computer is in my husband's living room/office (we have a small place).
It happens to be next to the bedroom so if mine says I am online, safe to assume I was on fairly recently.

What is something you would LIKE to happen today? (If it's not personal, if it is, feel free to not answer).
