I will say this, a lot of more recent CG cartoons look really good; they found a style that works well with the medium and that's fine. but I still miss good old hand-drawn stuff and wish we'd at least see some every now and then.
Live action movies, though, always kinda fail to impress when they rely too heavily on CG. The 80s was a good time for practical effects.

The LOTR trilogy is like, my gold standard of practical/cgi integrated effects. If you've never watched the extended appendices I highly recommend it

CGI has to be implemented very carefully or you risk ruining the suspension of belief. That's why say, The Phantom Menace still gets a lot of flak for pushing it's cgi over practical effects

Practical effects also generate a lot of jobs for artisans of all kinds. Not everyone can or wants to sit at a computer all day rendering. The waste is pretty negligible. Parts are often reused by studios or sold off to other studios and as souvenirs

@eleven: Do it! You won't regret it! They basically treated the movie as alternate history instead of fantasy. The attention to detail is astounding

The Phantom Menace actually has some fun practical effects too. They're just waaay overshadowed by the bad cgi
