Of course, now that cave is melted... and no such creature was found. What do you think happened to it? Did it get snatched up by some carnie? Not a slow cooker recipe, but absolutely one of my favorite soft pretzel recipes. It's really easy to do on a chill stay-at-home day!! I'd even go as far as to say this is great beginner's into bread recipe, too. One of those quick learns. You can skip the baking soda/powder bath. It affects coloring, and longevity of chewiness. So without it, it's a bit harder after the first day (but not inedible, don't worry) and you won't get that same browning effect. Cool chemistry is the reason I think.

Ingredients
  • 1 ½ cups water, warm
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 packet active dry yeast
  • 4 ½ cups flour
  • 3 tablespoons oil, divided
  • ⅔ cup baking soda
  • 2 eggs, beaten
  • coarse salt


Steps

  • In a bowl, mix water, salt, and sugar until combined. Add yeast, and let rest 5 minutes until yeast starts to foam.
  • Add flour and 2 tablespoons of oil, and mix thoroughly until a dough forms.
  • Remove the dough and use the remaining oil to cover the bowl.
  • Cover bowl with plastic wrap or a towel, and leave in a warm place for 1 hour.
  • Preheat oven to 450°F (230°C).
  • Cut dough into 8 pieces and roll them out into thin ropes, twisting the two ends to form a pretzel shape.
  • Add baking soda to a large pot of water, and bring to a rolling boil. Boil each pretzel for 30 seconds per side.
  • Transfer pretzels to a baking sheet, brush with egg wash, and sprinkle with salt. Bake for 10-15 minutes, until golden brown.
  • Enjoy!

@Totalanimefan: Being able to pay the extra for sanity is such an amazing feeling. Did so during our big move, and aaahhh. Worth it. Altho we did all the moving ourselves, and it was the extra insurance that helped ease my mind. Especially during that one point where we spun in a 15ft uhaul. Our move happened to coincide with the blizzard in early Dec.

It's already happened! I'm just still very excited and happy over it lmao.

How niiice. Im excited for more daylight, means I can feel cozy doing some afterwork shoppin haha.

@Totalanimefan: Ayye, congrats and I hope the move goes swimmingly! It really is a balance, haha. I'll be sure to! I plan to do some more baking tonight, and gonna make some stock, too. I forgot to buy some but good thing I have the habit of holding onto veggie and bone bits. Tonight's more banana bread, and I think I'll start proofing some sourdough. I have a culture that's gone through 3 states now, which is neat! I'm not sure how it's affected the flavor profile, so now I might have to make a new starter to compare to. For science... and yummy excuses for bread.

Quick Q for anyone: Are y'all experiencing earlier, and longer periods of sun-time yet? I just noticed it last night, and it's confirmed this morning! Super bright for 7:30! Time to get plants started, too.

Have you ever planted anything? What's the last thing you planted?
Yes! It rarely survives for long, and speaking of planting.. I need to go get some soil this month and plan out what I'm planting this year. I finally have some space to try again! The last thing I tried to plant and grow from seed... Probably basil or catnip? I'm going to be trying again this year. Finger's crossed it works out fine! Oh, and climbing flowers. But I gotta make sure they're not invasive to my area first.

My January coulda been better, but it also coulda been worse. It was very middle of the road, I guess? It was extremely hard, too, though. A lot of emotional and mental health issues were brought to the forefront and I'm trying to deal with them properly. I feel really good about getting back to work, but I'm hoping in February I can figure out what a good work/life balance looks like for me, and achieve it. I want to switch careers, and maybe do more wfh data entry, transcription type of stuff.

I also got back into sewing and baking! Last year I was in this teeennny tinnnny apartment, that had super thin walls, and an even tinier kitchen. So I couldn't really bake or do much there. But, this year, I have a normal sized kitchen! And it's open to my living room! So I can hang out now yaaayy. It's nice having a normal sized kitchen man. So. Nice.
