Ice skating scares me a bit. I stick to the walls. Don't have the same fear for roller blading though.
I wish I knew how to speak fluent Japanese a.k.a nihongo. And be able to read kanji in context along hiragana characters. The kana is easy, but kanji is no joke.
I also wish I knew how to develop flash or rpgmaker games.

@djinn: ahhh backwards crossovers I think were the last thing I learned at lessons waaaaay back when I was a child before I quit. haha since you need to go backward to go into spins and jumps

I wish I could draw. There's so much amazing art out there and I tried for several years to draw but I just wasn't getting any better. My hands are super shaky. I do still paint sometimes just to be relaxed. I don't expect it to look good though lol
